This is Creamy Coconut Chicky Curry, or as we call it: CCCC. As in ‘You got to CCCC this!’ Not only because it has plenty of protein and savory goodness without meat. But also because of its creaminess, texture, color, spiciness and some crunch.
This is truly one of our favorite dishes and it’s so easy and fast to make with our high-protein VEGGOFIX CHICKY Mince.
Creamy Coconut Chicky Curry
recipe for 4 servings
Ingredients
1 pack or 200g of VEGGOFIX CHICKY Mince mix
300g long grain white rice (basmati is a nice option, but any rice will do fine)
1 onion, 1 can of (light) coconut cream, 100g of frozen spinach, 100g of cashews or peanuts
1 tbsp of red curry paste or powder, 1 tsp of chili flakes, 1 tsp of corn starch (to thicken the sauce if needed), salt, fresh parley or cilantro for garnish
Preparation
Put water to boil for the rice. Yes, we cook our rice like we cook our pasta because it is easier and faster, but if you want to wash your rice and put it in cold water to slow-boil it for more flavor we are not going to stop you.
While the water is heating up, prepare the mini burgers. Mix 200g of VEGGOFIX CHICKY Mince dry blend with 250ml (or 1 cup) of water. Stir in some chopped hot peppers or chili flakes, if you like. This mixture you can use right away. Make 8 mini burgers. Fry them in 2 to 3 tbsp of any oil for about 10 minutes. Flip them after 5 minutes. The flatter they are, the faster they will cook. Brown them on both sides for the best flavor. By the time the burgers are done, the water in the other pan is probably boiling and ready for the rice to be thrown in.
Remove the mini burgers from the frying pan to make it easier to prepare the creamy coconut curry sauce. Slice an onion in strips and fry it in the pan till it is dark brown. Once that is done, open a can of coconut cream and add it to the onion strips together with 100g of frozen spinach, 100g of peanuts or cashew nuts and, off course, the red curry paste or powder. Stir it until smooth. If the sauce is not thick enough to your liking you can add a tsp of corn starch dissolved in a glass of water.
Put the mini burgers back into the pan and cover them with sauce. Let it simmer for a couple of minutes while you strain the rice. Scoop some rice on a plate. Put the mini burgers with plenty creamy coconut sauce. You know the drill. Cut some cilantro or parsley and sprinkle it over the dish for the finishing touch.
