Easy Meaty Veggie Burgers

Whether it’s Veganuary or any other time of the year, easy vegan or vegetarian recipes are always welcome. Here are not 1, not 2, but 3 easy meaty veggie burger recipes to help you on your quest for meatless dishes. Easy Meaty Veggie Burgers

recipes for 4 servings

  Tips for the best veggie burgers

  1. For 4 burger patties (112 g each) use 200 g of VeggoFix Mince dry blend.
  2. You can add 1 – 2 teaspoons of oil to 200g of dry blend for more flavor.
  3. You can also add 50g of finely chopped onions, beets or other veggies per 200 g dry blend in order to add bulk, moisture and new flavors to the patties.
  4. Feel free to put in extra herbs and spices.
  5. Add 250 ml of water and mix well.
  6. Let the mince hydrate for over 3 minutes for firmer patties.
  7. Shape the burger patties thin (1 cm thick, 100 g – 130g) to limit the cooking time and get more browning.
  8. Or make smash patties (50-70g) for a more firm, meat-like texture.
  9. Fry the patties in 1-2 tablespoons of oil per 500g of hydrated mince.
  10. Add oil under the patties when you flip them.
  11. Fry them well for 3-6 min per side.
  12. We recommend an internal temperature of over 75°C, for those of us that care to measure.
  13. The burger patties should get well browned for maximum flavor and firmness.
  14. Add vegan butter and seasoning to your (vegan) buns before you toast them.
  15. Put vegan cheese on top of the patties before you assemble your burger. Pour some water in the pan and cover the patties with a lid. Steam melt for 1-2 minutes.

 Burgers for later

  1. Cook a batch of patties and keep them in a airtight container until you want to use them.
  2. Cover them with a little bit of oil and/or cheese and reheat them on the plate, in a pan, on a grill or barbeque in 1-3 min.
  3. Cooked burgers will last up to 3 days in the fridge.

Mushroom Burger

Ingredients and Preparation

 

Mushroom Burger

200g VeggoFix Meaty Mince + 250ml water + 2 tsp oil
Pulled Mushrooms (500g king/blue oyster mushrooms, 2-4 tbsp oil, 2 tsp smoked paprika, 1/2 tsp chili, 1/2 tsp salt, 2 tsp dried garlic, 1 tsp thyme, 2 tbsp BBQ sauce)
4 slices Vegan Gouda Cheese
Vegan Garlic Sauce (Make your own by adding garlic, parsley, vinegar, sugar and salt to vegan mayo)
4 Whole Wheat Buns

Shred the mushrooms with two forks by pulling them apart as shown in the video. Mix the mushrooms with half of the oil, all the paprika, salt, garlic and thyme. Spread the mushrooms on a baking tray and bake them for 20 min at 200°C. Finish them with the rest of the oil and BBQ sauce in a pan. You can also skip the oven all together and fry all the ingredients (except for the BBQ sauce) in a pan until the mushrooms are done (about 10 min). Then finish the pulled mushrooms with the BBQ sauce. The mushrooms from the oven will taste more meaty, the frying pan is faster.

Make 4 patties from VeggoFix Meaty Mince. Add 2 tsp oil in the mixture if you want to keep them longer. Fry them for 4 minutes on both sides in 2 tbsp oil. Assemble your burgers as you want.

Beetroot Veggie Burger

200g VeggoFix Meaty Mince + 250ml water + 50g Grated Beetroot
100g Arugula and/or Baby Spinach
Samurai Sauce (vegan mayo, red paprika powder, chili)
4 Multigrain Buns

No explanation needed. Just follow the tips and watch the how-to video.

Smash Burger

200g VeggoFix Meaty Mince + 250ml water + 50g finely chopped onion
4-8 slices of Vegan Cheddar
100g Caramelized Onion
4 Sliced Pickles
Burger Sauce (1 part vegan mayo, 1/2 part mustard, 1/2 part ketchup, pepper and salt by taste)
4 Burger Buns (brioche can have dairy) 

Caramelized onions are easy to make at home if you are willing to shed a tear or two and if you have some patience. Close the kitchen door so nobody can see you cry and thinly slice 2 or more big onions. Put 2 tbsp oil in the biggest frying pan you have that has a lid. Add the onion slices to the pan along with a glass of water. Now cook it with the lid on until the water has evaporated. Let the onions caramelize before you mix in the next glass of water and you cook them again until the water in gone. Keep repeating this till the onions are completely caramelized. This will take a while, like about 30 min, so make a big batch that will last. Add a little bit of vinegar to balance the flavors and for the caramelized onions to keep longer.

Make 8 mince balls from VeggoFix Meaty Mince and smash them with a backing paper covered spatula in a hot pan with 2 tbsp oil. Fry for 4 minutes per side until the patties are very well browned. Add more oil when you flip the patties or whenever you feel the need to. Melt the cheddar on top of the patties as described in our tips and shown in the how-to-video.
