We all agree that in today’s fast-paced world it’s important to have easy and quick lunch options that are tasty, nutritious and filling. This convenient wrap made with VEGGOFIX CHICKY Mince is all these things, but also completely vegan. An excellent recipe for those following a plant-based diet and a great meat-free meal for those looking to reduce their meat intake.
High Protein Veggie Wrap
recipe for 4 servings
Ingredients
Veggie meat triangles: 200 g VEGGOFIX CHICKY Mince mix, 250 ml water, 1-2 tbsp of oil, smoked paprika, chili flakes, agave sirop
4 whole grain wraps, green onions, carrots, radish, cucumber, tomato, walnuts, and fried or caramelized onions
Tomato sauce: tomato puree or passata, sage, salt white pepper, oil
Hummus, tahini or any other creamy vegan sauce you have in the house such as vegan mayo, cheese sauce etc.
Preparation
Mix 200g VEGGOFIX CHICKY Mince with 2 tsp smoked paprika, 1tsp chili flakes, 1 tbsp agave sirop and 250ml of water.
There is no need to wait for the mixture to bind and soften. There is not even a need to shape separate patties in this recipe. We will cut those shapes later.
Just pour 1-2 tbsp of your favorite frying oil in a large frying pan and flip the entire mixture into the pan and flatten it like a gigantic pancake. The flatter, the faster the mince is done.
After about 6 minutes on a medium-high heat you can slide the kingsize burger onto a large lid in order to make flipping it easier. Place your pan upside down over the lid and burger. Now flip all of it together and continue cooking it for about 4 minutes.
You can “cut” the burger into triangles with a wooden spatula before flipping if you find that easier.
Finely chop 1 carrot, 3 radishes, 1 green onion, a hand full of walnuts and slice 2 tomatoes and a medium sized cucumber. We had some caramelized onion left over from a burger dinner the day before so we used that instead of fried onions. Throw everything together or keep it separate. Do whatever makes you happy.
It is time to make some sauces or grab them from the fridge if you just do not have the time. We mixed 200 ml tomato puree with 1 tsp dried sage, 1 tbsp oil, white pepper and salt to taste.
For the creamy sauce we used home-made hummus, but you can add tahini, vegan mayo or cheese sauce instead.
By now the Chicky mince should be done. Cut it into 8 triangle like you would do with pizza slices. Put some tomato sauce on the wrap, place all of the other ingredients and top it of with the hummus. Wrap it all up and eat.
