Creamy Spinach Penne Pasta with Porky Bits

Not the biggest fan of spinach or green smoothies, even though you are aware that green veggies are good for you? This creamy spinach penne pasta with porky bits made from VEGGOFIX PORKY Mince is a great way to get your recommended dose of spinach AND protein. Take that, green smoothy!

Creamy Spinach Penne Pasta with Porky Bits

recipe for 4 -6 servings

Ingredients

High protein vegan Porky bits: 200 g VEGGOFIX PORKY Mince mix, 250 ml water, 2 tbsp oil

500g dried penne pasta and 500g (fresh or frozen) spinach

1 onion, 4 cloves of garlic, salt and pepper

Unsweetened plant milk, any (vegan) green pesto you prefer, (vegan) herb butter containing lemon, parsley, salt and garlic

Fried onion and fresh basil

Preparation

As always, first get the pasta water going and chop the onion. 

Add the entire content of a VEGGOFIX PORKY Mince package (200g dry mix) to a bowl and mix it with 250ml (a cup) of water. There is no need to wait after adding water to the VeggoFix Porky Mince dry mix. It’s ready to be cooked right away!

Shape the mixture into four burger patties. The patties should be nice and flat so you can get a lot of browning and crisp. Fry the patties in oil at medium-high temperature till they are brown and crispy. We will save these patties for later.

  Throw the penne pasta and a few pinches of salt in the boiling water. The penne will take about 8 to 10 minutes the cook. That is plenty of time to get the sauce ready. You do not want to overcook the spinach. Do not ask us how we know. Start sauteing the chopped onion with 1 tbsp oil in a large pan.

After about 2 minutes add the spinach on top of the onion. Add the plant milk, herb butter, salt and pepper. Let it all cook and defrost for a few minutes. Cover the pan with a lid to make this process go quicker.

Cut the crispy burgers patties into Porky bits. If you are using fresh spinach you should add it now to the sauce so it has a few minutes to cook, but no more than that. Add the penne pasta, pesto and Porky bits to the sauce last.

And you are done. Sprinkle the pasta with some fried onion and garnish with fresh basil leaves for the looks.
