Do you love those summer evenings when you come home and making dinner is just a breeze? Allow us to give you a recipe that is filling, yet refreshing. Yes, it is possible.
Let us make meaty tagliatelle pasta using plan-based VEGGOFIX MEATY Mince, yellow squash and zucchini.
Meaty Tagliatelle Pasta
recipe for 6-8 servings
Ingredients
200 g VEGGOFIX MEATY Mince mix, 250 ml water, 3 tbsp olive oil
500 g tagliatelle pasta (dry)
half a yellow onion, half a red bell pepper, 1 yellow squash, 1 zucchini
500 ml tomato pasata, 1 tsp of oregano, sage, maghiran, basil, salt and pepper
fried onion and basil or grated (vegan) cheese
Preparation
Start with mixing 200g VeggoFix Meaty Mince with 250ml water. Add the mixture to a hot pan with 3 tbsp of olive oil. Spread it out as flat as you can so you get maximum browning. Let it fry on one side for 6-8 minutes at a medium-high temperature. Do not forget to start boiling the water for the tagliatelle!
While VeggoFix Meaty Mince is browning and the water is getting to a boil, you can start chopping the onion, bell pepper, zucchini and the yellow squash. There is no need to cut these veggies super finely. Slice the zucchini and yellow squash in two over their length and then again so you end up with 4 lengthy parts each. Then cut slices from those to save time and effort.
As you turn over the mince, after around 6 to 8 minutes, you can add in the chopped onion. Go ahead and put a lid on the pan to make the onions cook faster. Do not worry about pieces that stick to your pan. These pieces will come off effortlessly after you add the sauce.
This is also a good time to add the tagliatelle to the boiling water, unless you are using fresh pasta. Most dried pasta takes 8 to 10 minutes to cook. Fresh pasta takes much less time.
After a few minutes the onion should be getting a bit translucent. This is the perfect time to add the bell pepper, zucchini, squash, tomato passata, salt, pepper, oregano, sage, maghiran and basil. Let all that cook for 6 minutes. After that the tagliatelle should be done and you can serve your pasta topped with grated (vegan) cheese or fried onion and a few leaves of basil as decoration.
