Greek Roasted Potatoes with Tzatziki Sauce and Vegan Patties

Who doesn’t love crispy, oven roasted aromatic potatoes paired with fresh Tzatziki sauce and grilled patties? A great combination of  flavours for you to enjoy whenever you crave some Greek style dish.

For this lovely recipe we made vegan patties from VEGGOFIX CHICKY on an electric grill.

Greek roasted potatoes with vegan patties

recipe for 4 servings

Ingredients

   Vegan chicken patties: 200 g VEGGOFIX CHICKY mix, 250 ml water, 1-2 tbsp of oil

  Greek style roasted potatoes: 8 medium small potatoes (peeled or not, your choice), olive oil, dry oregano, rosemary, paprika powder, salt and pepper, fresh parsley and dill to put on top when serving.

  Vegan Tzatziki sauce: 250g of high-fat (coconut based) plant-based yoghurt, 1 big cucumber (or 2 small ones), 3 garlic clove, 1 tbsp of lemon juice, 1 tbsp of finely chopped fresh dill, salt and peper to taste

Preparation

  Cut the potatoes into wedges and mix them in a bowl with the olive oil, dry oregano, rosemary, paprika powder, salt and pepper.

  Put parchment paper on your baking sheet so the potatoes will not stick when baking. You can preheat the oven to 200C, but this is not a requirement if your oven heats up fast enough. Bake for 40 to 50 min and flip the wedges after 30 min.

Optional: The potatoes can also be fried with minimum fat in a big non-sticking pan if you have one. The cooking time would decrease to 20 to 25 min per batch.

    Mix 200g VeggoFix Chicky Mince with 250ml of water and 1-2tbsp of oil. Canola oil, olive oil or sunflower oil all work well. There is no need to wait for the mixture to bind and soften. You can shape 4 burger patties right away after mixing.

  Put the patties on your electric grill and close the lid. If you want grill marks in a cross pattern turn the patties 90 degrees after 5 min. Grill the patties for 8 to 10 min at medium-high heat.

  Make the Tzatziki sauce. This one can hardly be easier. Mix 250g of high-fat (coconut based) plant-based yoghurt, sliced cucumber, crushed garlic cloves, lemon juice, finely chopped fresh dill and add salt and peper to taste.

Tip: If the yoghurt is not very thick to begin with you can squeeze out some of the water from the cucumber slices so the sauce does not become too thin.

  Test if the potatoes are done by piercing a big wedge with a fork. If the fork goes through easily, serve up the potatoes, the patties, the tzatziki sauce, add sprinkle fresh dill and parsley over the dish.
