Vegan Mediterranean Kofta Kebab

Mediterranean street food is delicious, but can we make it vegan?

Yes, we can, and this vegan kofta kebab made with VEGGOFIX MEATY Mince is just one tasty example. It is so easy that you can make it at home without the need for any fancy kitchen equipment.  If you want, serve them on lahmacun (known sometimes as Turkish pizza), so this Mediterranean dish becomes even more packed with flavor and protein.

Vegan Mediterranean Kofta Kebab

recipe for 4-6 servings

Ingredients

   200 g VEGGOFIX MEATY Mince mix, 250 ml water, 1 tbsp oil, 1 tbsp garam masala, 2 tbsp parsley

Lahmacun or any other type of flat bread 

Cucumber, yellow bell pepper, tomato, white cabbage

To grill: onion, red bell peper, zucchini, eggplant 

Sauces: garlic sauce/ Sriracha sauce/ hummus/ tahini/ whatever sauce you like 

You also need wooden skewers or all-metal butter knives, like we shown in the recipe video, if you have them.

Preparation

Mix 200 g VEGGOFIX MEATY Mince with 1 tbsp garam masala and 2 tbsp parsley (dry or fresh). Add 250 ml water and 1 tbsp oil and knead the mixture a bit so it becomes tighter. One minute of kneading makes all the difference. You do not have to knead, but this way the Kofta Kebab is more likely to stay on the skewers.

If you want grilled veggies with your kofta kebab this is a good time to start with them. Slice the onion, red bell pepper, zucchini and eggplant into big strips. Coat them with a bit of salt, pepper and oil if you prefer.

Tip: If you do not have a big grill it might take too much time to grill this amount of veggies, so put a little bit of each type of veggie in your grill pan. This way you have a nice assortment of grilled veggies in one batch. 

If you have extra time on your hands you can make lahmacun to put the kofta kebab in. We made these with 200g grated smoked tofu, 3 tbsp tomato pasata, 2 tbsp dried parsley, 2 tsp dried cumin, 2 tsp paprika, 1 tsp dried garlic, 1 tsp coriander seed and half a tsp of salt. Spread this mixture on 4 to 6 tortillas and grill them upside down in a frying pan for about 3 minutes before you flip them over. Then toast for one more minute.

Form 4 to 8 balls from the kofta kebab mixture, stick them on skewers and squeeze them so they look like kebab. If you have a bigger grill pan and longer skewers you can choose to make 4 kebabs like we did with DIY metal knife skewers. Add 2 tbsp oil to the grill pan and grill the kofta kebab for about 5 minutes per side until they are nice and brown.

Now that the kebab is heating up we can start chopping the salad veggies. Slice a small cucumber, yellow bell pepper and a tomato. Or keep it even simpler and make a simple white cabbage salad with a pinch of salt and a splash of apple vinegar.

All you have to do now is wrap it up. Try any version of this Mediterranean dish you want!
