Did your family and friends show up unannounced and now you need to make comfort food without meat fast? That sounds impossible.
There is hope! You might not believe it, but this easy red lentil soup for up to 15 people with VEGGOFIX MEATY Mince is done in 30 min and it’s super deliciously wholesome.
Red Lentil Soup
recipe for 10-15 servings
Ingredients
SOUP:
3L water
1Kg Red lentils
2 Carrots
1 Onion
2 tbsp Tomato paste
1 tbsp Cumin
1 tbsp Rosemary
1 tbsp Oregano
1 tbsp Salt (or less)
3 tbsp Dried vegetable stock
1 tbsp Garlic
500g frozen soup vegetables
1-2 Tsp Kurkuma (optional)
GARNISH:
200 g VEGGOFIX MEATY Mince mix
250mL water
1 red Onion
1 tbsp Caraway
The finishing touches:
Juice of 1-2 lemons
Bunch of fresh parsley
Preparation
Chop 1 or 2 onions and 2 carrots. Pour 2 tbsp olive oil in a large soup pan and fry the onions and carrots with 2 tbsp tomato paste, 1 tbsp cumin, 1 tbsp rosemary, 1 tbsp oregano, 1 tbsp garlic, 3 tbsp dried vegetable stock with salt. Fry all of that until the flavors from the herbs get released a bit.
While everything is getting nice and toasty, wash the red lentils. Then add the lentils to the toasted herbs mixture along with 3 liters of water. (about 12 cups) Dunk in 500g of frozen soup vegetables. Let that boil for 20 minutes till the lentils are tender.
While the red lentils are boiling, mix 200g VeggoFix Meaty Mince with 250ml water in a separate bowl and let the mix hydrate for 3 min. Add the mixture in a hot pan with 1 to 3 tbsp of oil. If you don’t like to do the dishes, you can mix the mince blend with water straightaway in the pan with oil.
Spread it out as flat as you can so you get maximum browning. Flip the mince over after about 5 minutes and cook it for another 5 minutes. Once it is done remove the “pancake” from the frying pan and slice it into small blocks.
Quickly cut a red onion in small pieces and throw it in the hot frying pan that you just used for the VeggoFix Meaty slices. Add 1 tbsp of olive oil and 1 tbsp of caraway seeds. Fry the red onion until it has gotten glassy and the caraway has gotten fragrant. Reheat and mix the VeggoFix Meaty slices with the red onion.
Chances are that the red lentils soup is done cooking. Blend it smooth with a stand mixer. Add salt if needed. Serve with fresh chopped parsley, lemon juice and the VeggoFix Meaty slices, of course. Alternatively, you can also sprinkle some roasted sesame seeds on top.
There you go! The easiest comfort food for the whole family done in (less than) 30 minutes. Now let’s hope the family does not fight over it!
