Do you like unconventional dishes, like stuffed onions, relatively unknown to Western culture, but you fear they are not easy to prepare or they will not taste as good without meat?
Rejoice! Making vegan stuffed onions with an Arabic twist is much easier than it seems with VEGGOFIX MEATY Mince.
Easy Vegan Stuffed Onions
recipe for 4-8 servings
Ingredients
200 g VEGGOFIX MEATY Mince mix, 250 ml water
6-8 large onions and 200 g long grain rice (dry)
BBQ sauce, spicy curry powder, garlic, spring onion, oil
sesame seeds, sunflower seeds, walnuts, raisins
a shallow heat-resistant oven dish
Preparation
Peel the onions and cut them halfway like in the video. Boil them till they are tender in salted water or vegetable stock. This will take about 10 minutes. Put the rice to boil.
After that, mix 200g VeggoFix Meaty Mince with 250ml water in a separate bowl and let the mix hydrate for 3 min. Add the mixture in a hot pan with 3 tbsp of oil. If you don’t like to do the dishes, you can mix the mince blend with water straightaway in the pan with 2 tbsp of oil.
Spread it out as flat as you can so you get maximum browning. Flip the mince over after about 4 min and divide it with a spatula so you get a mincy texture. Once it is done remove it from the frying pan and keep it for later.
Dry roast 1 or 2 handfuls of sesame seeds, sunflower seeds and walnuts for a few minutes till they are fragrant. Keep them separate for later.
By now you should be able to take the cores of the onions out easily. Do not burn your fingers. Chop up the onion cores and fry them in some oil together with a tbsp of spicy curry powder and BBQ sauce till they get a good color. Then add the cooked rice, nuts, seeds, raisins and cooked mince to the rice. Mix it all up and let it cook for about 5 minutes to get all the flavors blended.
Preheat the oven to 200°C. Start filling the onions as shown in the video and place them in a shallow oven dish. Pour the water you boiled the onions in over the filled onions. In case you have rice left over after filling all your onions you can fill a bell pepper. The rice works well with red bell peppers too. Bake the filled onions for 30 minutes in the oven. If you have the option turn on the grill for more heat from above.
There you go! An exotic dish made with minimum effort. Enjoy!
