It is movie night and it is time for loaded nachos. Covered with spicy VEGGOFIX MEATY Mince, fried onions and cheese dip will be the highlight of any snack table.
Spicy Loaded Nachos
recipe for 2-4 servings
Ingredients
200 g VEGGOFIX MEATY Mince mix, 250 ml water
150g bag of tortilla chips or nachos
1 onion, 1 red bell pepper, 1 hot pepper
2 tsp cumin seeds, 1 tsp of smoked paprika, sweet corn, jalapenos or spring onions
garlic sauce and (vegan) cheese dip
Preparation
Dice an onion and throw it in a frying pan, after you put in 1-2 tbsp oil of course. Sprinkle 2 tsp of cumin and 1 tsp of smoked paprika over. Once the onion looks caramelized put them in a bowl for later.
Add 250 ml water to a bowl and mix 200 g of VEGGOFIX MEATY Mince into it. Heat up a frying pan, pour oil in it and spread the mixture in the pan as you would with minced meat so it browns quicky. After 4 minutes, flip the mince over and chop it with a spatula into smaller bits. Add more oil and a finely chopped hot pepper if you wish.
Please remember to be careful when handling spicy hot peppers. Make sure you do not touch the sliced peppers and wash your hands well afterwards. Whatever you do, do not put hot peppers in your eyes. This might seem like an unnecessary warning, but we rather be safe than sorry.
Cut the red bell pepper in nice little blocks or cheat your way to greatness by getting the pre-cut frozen bell peppers out of your freezer. Either way, move the mince to one side of the pan and toss in a chopped bell pepper. Let that it get some colour before you mix it up with the mince.
Empty a bag of nachos (tortilla chips) on a platter or large plate and start adding spoons of mince, cheese dip, green onion, jalapenos slices, sweet corn and garlic sauce on top. There are no rules. Just put whatever you want.
