Spicy Savory Filling Vegan Chicky Mince Balls in Peanut Sauce

Spicy, savory and filling. This dish has it all. And all that without a single gram of meat. It is simply one of the best dinners to start the week or the weekend. Have these mince balls in peanut sauce whenever you need a boost. They are so easy to make with VEGGOFIX CHICKY Mince that you could have them any day of the week.

Chicky Mince Balls in Peanut Sauce

recipe for 4-6 servings

Ingredients

   1 pack or 200g of  VEGGOFIX CHICKY Mince mix.

A jar of peanut butter (100-150g), 200ml unsweetened plant milk, 1 or 2 hot peppers, 2 tbsp soy sauce, 1 tbsp red curry paste, 100g frozen green peas

  200g sticky white rice

  a bunch of cilantro or parsley for garnish

Preparation

Put water to boil for the rice. Yes, we cook our rice like we cook our pasta because it is easier and faster, but if you want to wash your rice and put it in cold water to slow boil it for more flavor we are not going to stop you.

While the water is heating up, prepare the mince balls. Mix 200g of  VEGGOFIX CHICKY Mince dry blend with 250ml (or 1 cup) of water. Stir in some chopped hot peppers or chili flakes, if you like. This mixture you can use right away to roll 16 mince balls from. Fry them in 2 to 3 tbsp of any oil for about 10 minutes. The smaller they are, the faster the mince balls will cook, but it will cost you a bit more time and effort to shape them. Brown them on all sides for the best flavor. Sesame oil works great as frying oil for this dish, but feel free to use any type of oil you want.

  By now the water in the other pan is likely boiling already so throw in the rice. It is now time to start making the peanut sauce. Put a big spoon of peanut butter (150g or less, if you mind the calories) in a pan along with 200ml unsweetened plant milk, 1 finely cut hot pepper, 2 tbsp soy sauce, 1 tbsp red curry paste, and 100g of frozen green peas. Boil and stir it until smooth.

Pour the peanut sauce over the mince balls in the frying pan and let it simmer until the rice is done and the peas are well defrosted. Cut some cilantro and sprinkle it over the dish for the finishing touch.

And there you go! A fantastic spicy dinner done in only a couple of minutes!
