Vegan Massaman Curry Rice – quick & easy dinner idea

Do you love to eat, but not to cook because it seems too difficult and takes too long? Great, flavorful food does not have to be difficult and here is a quick and easy dinner idea to prove our point.

Massaman curry rice made with VEGGOFIX MEATY Mince is not only full of flavor. It is also high in protein, super easy and done in 15 minutes or less.

Vegan Massaman Curry Rice

recipe for 4 servings

Ingredients

   200 g VEGGOFIX MEATY Mince mix, 250 ml water

200g long grain rice 

500g frozen vegetable mix

Massaman curry paste, 1 bunch of fresh parsley, 3 cloves of garlic, roasted green split peas

optional: soy sauce and a can of sliced pineapple

Preparation

Start with boiling the rice in a copious amount of salted water. For 200 g of rice you should use at least 600 ml of water. This way you get a drier grain which is ideal for stir frying.

Add 250 ml water and 2 tbsp oil to a large anti-stick frying pan and mix 200 g of VEGGOFIX MEATY Mince into it. Spread it so it browns quick. After 4 minutes, flip the mince over and chop it with a spatula into smaller bits. Add more oil if you wish. Pour the frozen vegetable mix over the mince so it can defrost a bit while the mince browns for a few more minutes before you mix in the veggies and cook it all till the veggies are done.

By this time, the rice should be ready. Strain the rice and flush it with some water to remove the lose starch. This will make your rice less sticky. If you still have a lot of space in your frying pan or wok you can throw the drained rice straight on top of the rice. Otherwise, bring the mince over to another heat resistant container or fry the rice in another pan with a bit of oil. 

Cut the parsley and garlic. The garlic is much easier to peel if you crush it before. The skin will break and get loose. Add a large tbsp of Massaman curry (or any red/yellow/green curry of your choice) to the rice along with the parsley and the garlic. For some extra crunch you can add a cup of roasted green split peas. 

If you are lucky you can buy crispy peas in a store in your area. To make roasted green or yellow split peas yourself, soak dry split peas for 5 or more hours. Strain and flush them with clean water. Add oil and spices like salt, cumin, paprika and garlic powder, and then roast them for 20 minutes in a pan or bake them in an oven for 30 min. These are ideal to add to dishes that need so extra crisp and crunch or just to eat them as a high fibre  high protein snack.

Serve as you want or serve with slices of pineapple and soy sauce like we did.
